Sigrok (https;//sigrok.org/) is useful FOSS to observe signals (analog or digital).
It can be used to decode signal of UART communication, and/or I2C communication.
Using PSLab hardware is good for education.

We have forker the libsigrok repo to the FOSSASIA org and I tried some first steps: https://github.com/fossasia/libsigrok/tree/drivers/pslab
